Flint corn (also called decorative corn or calico corn) is said to be "hard as flint" because each kernel is protected by a hard endosperm. This corn was originally cultivated throughout North America by Native Americans and because of its low water content, it is more resistant to freezing than its sweet corn cousins. Although the many-colored kernels make for festive decoration, flint corn is also the preferred corn for making hominy and can be popped for popcorn. It is completely dried and does not need refrigeration.
