Ipsa challenged themselves to create a frozen enchilada that didn’t reheat like the soggy and sad versions typically found in the freezer aisle. Top with sour cream, a few slices of avocado and a sprinkle of cilantro. Pro tip: serve with fried eggs for an excellent brunch at home.
Keep frozen until ready to heat. Remove plastic packaging. Bake dish on a sheet pan in preheated 400° oven for 50-60 minutes, until center is heated through and top of enchilada is crisp and golden brown. Let cool 10 minutes before serving.
