Chorizo is a super flavorful, spicy pork sausage that derives a lot of its flavor from the types of peppers used, usually smoked paprika and/or chili peppers, though the exact spice combination varies by region as chorizo is made all over the Spanish-speaking and Portuguese-speaking world. This chorizo is based on a Mexican style chorizo fresco which means that you can expect smoky, spicy sausages that need to be well cooked before eating.
