Ridiculously healthy, with its red leaves and snowy white ribs, radicchio has a peppery bite that brightens salads. More like a cabbage than a lettuce, it also holds up well to cooking. Roast or grill wedges and top with balsamic glaze for a hearty side dish; pair with some Italian white beans; chop and add raw to a salad; cook into a creamy sauce or lasagna.
