Chioggia or Indigo Radicchio
Currently sourced from Roots to River Farm, New Hope PA and Lancaster Farm Fresh Cooperative, Lancaster PA. Ridiculously healthy, with its red leaves and snowy white ribs, radicchio has a peppery bite that brightens salads. It holds up well when cooked, too. Roast or grill wedges for a hearty side dish; pair with some Italian white beans; or chop and add to a raw salad. You can even add it to pasta.
