Cheddar Cauliflower

This cauliflower is only called “cheddar” in reference to its orange color rather than its taste, but it does contain more beta carotene and about 25% more vitamin A than white cauliflower. Blend into a soup; roast in the oven with curry powder; add to a crudité platter.

Store in a loosely sealed reusable plastic bag in the fridge with a paper towel to absorb excess moisture for up to a week.
