Fresh organic Caraflex cabbage, a cone-shaped variety with tightly wrapped, water-rich leaves that spiral to a narrow point. Sometimes called Sweetheart cabbage, Caraflex is more tender and less pungent than round green cabbage, with thin leaves that hold a lettuce-like crunch even eaten raw. As the head matures, its wide outer leaves shade and protect the sweeter, more delicate leaves developing at the center, the same wrapping mechanism used across cabbage varieties to shield the head from sun. The tender texture makes it a natural stand-in for lettuce in slaws and salads, and it shreds quickly for stir-fries, egg rolls, or a fast sauté. Its thinner leaves also pack more tightly into a fermenting crock than a standard round head, which is part of why it has become a favorite for small-batch sauerkraut. Halved and roasted with olive oil, or braised whole, the dense conical shape holds together well through cooking. Pairs well with apple, caraway, dill, and sharp cheddar.
