A deep golden skin splits open to reveal a succulent ivory flesh--almost like the texture of a ripe pear. With hints of banana and pineapple, this soft melon is incredibly aromatic and perfect for eating raw as is. You can also use it in salads or in cold soups, like a melon gazpacho or in sweet applications like sorbets or ice pops, though you may need to add a bit of sugar.
