Baby Tokyo Turnips

Similar to hakurei turnips, these baby Tokyo turnips are mild, tender and juicy, with slightly spicy and bitter greens that are also a treat to eat. Lean into the sweetness and try them glazed with sugar and unsalted butter; honor their roots and roast with miso; simply saute the turnips and greens together with a little olive oil, salt, and pepper.

Remove greens, leaving about one inch attached to the root, and store greens wrapped in a damp paper towel in a bag in the crisper drawer for up to 3 days. Store roots separately in a slightly open plastic bag in the crisper drawer for up to a week.
