Think of baby celery as the "herb" form of full grown celery. With long, thin stalks and mature, full leaves, baby celery is similar in size to cilantro or parsley. Baby celery has an intense celery flavor that is much stronger than that of mature celery heads. The strong celery flavor is concentrated in the leaves, though the entire plant is edible. This baby celery doesn't make a great substitute for larger celery unless what you are going for is a strong celery punch of flavor--use the leaves in sauces, soups, pestos, salads, or just as an herb, The stalks can be used as an aromatic, or blended along with the leaves in any of the above applications. The flavor works really well with carrots, onions, tomatoes, mushrooms, and many Asian vegetables.
