Caught ecologically using traditional methods off the coast of Cantalabria and Viscaya in Northern Spain, Conservas Ortiz anchovies are then preserved in salt, pressed, and left to mature in barrels for a minimum 6mos. Once they have fully matured, Conservas Ortiz fillets the anchovies one by one using a knife and pack them carefully by hand in olive oil. Thanks to this meticulous preparation process, these Spanish anchovies have a compact texture and intense flavor. Use for the base of many traditional Spanish or Italian sauces, top a pizza, or put a fishy spin on your traditional caprese salad.
