Mixto is a blended kombucha vinegar made by combining multiple kombuchas and then further fermenting and aging them together in new American oak barrels crafted by artisan coopers in the Adirondacks. By blending and aging these ferments as one, Yesfolk captures a singular moment in the life of the brewery.
The result is a layered, evolving vinegar with softened acidity and subtle oak influence, shaped by the kombuchas and the conditions under which they were made. Mixto is meant to be experienced slowly, enjoyed neat or on the rocks like a cask-aged spirit, used in thoughtful cocktails, or shared as part of a special meal.
