Made in collaboration with Hudson Valley Brewery, this vinegar begins as a three-year barrel-aged Imperial Stout before being fermented into vinegar in American oak barrels for six months and then aged an additional year in bottle by Yesfolk Tonics.
Deep, layered, and savory, it’s reminiscent of Chinese black vinegar and long-aged balsamic, with rich malt character, gentle sweetness, and rounded acidity. Use it as a base for marinades or sauces, drizzle over peaches and heirloom tomatoes, or serve alongside dumplings as a dipping sauce.
