Alan, a food scientist specializing in dairy cultures, discovered his love for raw milk cheese while working in Holland and later shared this passion with Barbara. Leaving their successful careers in specialty foods and advertising, they revitalized a dilapidated dairy farm in Goshen, NY, just 57 miles from NYC, transforming it into a fully operational creamery.

At 5 Spoke, cheesemaking follows a philosophy of balance—combining the rich flavor of fine cheese with the health benefits of raw milk. Their production takes place on-site in a restored barn and farmhouse, where they craft hand-made cheeses in the farmstead tradition. Using only raw milk from their closed herd of pasture-fed Holstein cows—raised without pesticides or hormones—their cheeses reflect the natural diversity of seasonal grasses and wildflowers, resulting in unique, complex flavors that cannot be manufactured or duplicated.
