Fresh artichoke and garlic girasoli are a sunflower-shaped stuffed pasta, handmade in Brooklyn by La Trafila. The name comes from the shape: girasole is Italian for sunflower, and each round of egg-rich fresh pasta is pleated to look like one.
Inside, roasted artichokes and roasted garlic are blended with creamy whole milk impastata and a savory soffritto of slow-cooked vegetables. Think of them as a rounder, fluted cousin of ravioli. Because the pasta is fresh, they cook in just a few minutes in boiling salted water, and they need little more than melted butter, good olive oil, or a light cream sauce. Finish with grated parmesan and cracked black pepper, or serve them over a simple tomato basil sauce.
