Suzanne Lyon launched Heathcote Bakery in January 2024, not by plan but by demand: her daughter's teacher asked to buy a dozen of the cookies Lyon had been giving away to neighbors and friends, and the bakery followed from there. Lyon had spent months baking compulsively after the arrival of a new baby and the loss of her job, testing and adjusting a single chocolate chip cookie recipe until it was exactly what she wanted. She packaged them and gave them away because, as she put it, there are only so many cookies you can have in the house at one time.

Heathcote's signature product is a very specific cookie: ultra-thin, hand-scooped, with a crispy edge and a soft center and a noticeable salt finish. Every batch is baked fresh to order, with no inventory kept and no preservatives used. Named one of Oprah's Favorite Things in 2025, the bakery currently offers chocolate chip, chipless, and crumble varieties.
