Picked daikon radish and carrot, crispy shallot, mint and cilantro, Tamari Maple Baked Tofu,King Soba soba noodles, and tamari sauce.
Firm tofu is sliced thin and sits in tamari, maple, ginger, and sesame oil for at least two hours, then gets a scatter of black and white sesame seeds before it bakes.
Soba noodles are cooked, shocked in ice water, and tossed with roasted sesame oil. Daikon and carrot are julienned and quick-pickle just long enough to keep their refreshing crunch.
Sweet shallots, sliced thin and fried in avocado oil until toasty and golden, are packed separately in each bowl to retain their satisfying crispiness. Tahini dressing is blended with tamari, rice vinegar, garlic, ginger, and scallion to make a delicious sauce. Each bowl comes with a side of of tahini sauce so you can season the bowl to your liking.
