Fresh local blueberries from Hurd Orchards, a family fruit farm in Holley, New York. Plump and deep blue-purple, the berries carry the natural silvery bloom that signals freshness, a wax the fruit forms on the bush to seal in moisture, so a light haze is a good sign and does not need rinsing off until serving. Blueberries are one of the few widely grown fruits native to North America. Eat them by the handful, fold them into pancakes, muffins, and cobblers, scatter them over yogurt and oatmeal, or simmer them into a quick compote. They freeze well spread on a tray, then bagged, for smoothies and baking. Store them dry in the refrigerator and rinse just before eating.
