Essex Street Cheese's Comté is a firm, aged raw cow's milk cheese sourced from the Jura Mountains of France. This alpine-style cheese is selected from Marcel Petite's Fort St. Antoine aging cave, a former military fort located underground. The wheels are aged for 13 to 18 months, developing a golden paste dotted with small salt crystals. The flavor profile features notes of brown butter, hazelnuts, and roasted peanuts, alongside an herbaceous and creamy quality. This raw milk cheese is traditionally served on cheese boards alongside cornichons, Dijon mustard, and crusty baguettes. It melts smoothly and can be used in fondues, grilled cheese sandwiches, and macaroni and cheese, or grated over potato gratins and roasted root vegetables.
