After helping to develop the honeynut squash, famed vegetable breeder Michael Mazourek of Row 7 seeds, who never sees varieties as finished, asked: how can we one-up the Honeynut? Noticing that the Honeynut’s thin skin caused it to go downhill in cold storage after a few weeks, Mazourek continued to tinker, selecting for outstanding flavor along the way. Still in the experimental phase, the 898 squash is the delicious result: a longer-storing, single-serving butternut packed with flavor and beta carotene. These squash are so sweet, they need little more than a bit of oil and salt to roast to delicious perfection, but why not whip up a batch of "pumpkin" blondies or butternut squash soup without any need for apples.
