A milky, creamy, American Havarti-style cheese. This beauty is encased in bright yellow wax and was named after the year the Highland Farm was established.

1841 is a raw cow’s milk cheese, aged 3 months. Light and mild in flavor with a semi-firm texture. The finish of 1841 has a touch of tang that will bedazzle your taste buds.

Enjoy 1841 with an apple or a pear and some raspberry jam, and don’t be afraid to pile it all on crusty bread.
