Makabi & Sons is a Los Angeles craft bakery built around a single organizing idea: flavors as places. Each cookie variety is named for a location and built around the ingredients associated with it. Oaxaca is chocolate, cinnamon, and cayenne. Uji, a region in Japan's Kyoto Prefecture known for its matcha, is matcha and black sesame. Maroc is rose, pistachio, and cardamom. Oxford is vanilla and earl grey. Capri is lemon and poppy. The collection reads as a kind of edible atlas, each piece rooted in somewhere specific.
The bakery is a close family-run partnership, named for the founders' mother's maiden name as a tribute to her influence. Her love of the eclectic and the enchanting, they write, shaped their tastes and informs what they make. Ingredients are organic and high-grade throughout: sweet cream butter, pure extracts, premium flour, cocoa, and vanilla, chosen for what each one contributes to the whole.
