1 Head Broccoli, cut into florets
1 Pack Yuzu Misoyaki Starter
1 Scallion, minced (optional)
1 lb Carrots, cut in half lengthwise
1.5 cups Delta Blue Long Grain White Rice
Olive Oil
Sea Salt
Soy Sauce (optional)
Preheat oven to 400 degrees.
Cook rice according to package directions.
Place carrots and broccoli on baking sheet. Coat with olive oil and sprinkle with sea salt.
Place veggies in oven and roast 10 minutes. Remove and brush with Yuzu Misoyaki Starter. Return sheet to oven and roast an additional 10 minutes, or until carrots are tender and broccoli is slightly caramelized.
Season rice with soy sauce or your favorite rice seasoning, divide between bowls and top with carrots and broccoli. Garnish with minced scallion, if desired.
