1 Apple
1 Fennel Bulb, trimmed
1 Tbsp Lemon Juice
1/4 cup Fennel Fronds
2 Tbsp Olive Oil
2 tsp Whole Grain Mustard
2-3 Red Radishes, or other radish like Watermelon Radish
Flaky Sea Salt
Freshly Cracked Black Pepper
Freshly Shaved Parmesan, for serving
Cut apple in half lengthwise and remove core. Using mandoline, thinly shave fennel, apple halves, and radishes.
Whisk together oil, lemon juice, and mustard; season with sea salt and pepper.
Toss shaved fennel, apple, and radishes with dressing and adjust seasoning, if necessary. Top with Parmesan and fennel fronds.
