1 Cucumber
1 tsp Raw Honey
2 Tbsp White Wine Vinegar
3 Tbsp Olive Oil
Freshly Ground Black Pepper
Sea Salt
¼ Red Onion, finely chopped
¼ cup Basil Leaves
¼ cup Nuts, toasted and chopped (optional)
½ Cantaloupe, or other melon variety
Whisk chopped nuts, pepper, vinegar, and honey in small bowl. Gradually stream in oil, whisking constantly until emulsified; generously season dressing with sea salt and pepper.
Using mandoline, shave cucumber and melon (or thinly slice with a knife). Place in large bowl; add basil. Drizzle dressing over and toss gently to coat. Season once again with sea salt and pepper, to taste; and serve.
