1 Tbsp Lemon Juice
10 oz Vine Tomatoes, quartered
12 oz Green Beans
2–3 Tbsp Olive Oil
6 oz Shiitake Mushrooms, sliced
Black Pepper
Sea Salt
½ Tbsp Soy Sauce
Preheat oven to 400 degrees.
In a bowl, toss green beans, mushrooms, lemon juice, olive oil, and soy sauce. Season with sea salt and pepper and toss again, until well coated.
Place green bean-mushroom mixture onto baking sheet in a single layer.
Bake 20 minutes or until green beans are tender and mushrooms are golden brown.
Remove from oven, toss with tomatoes, season with more sea salt and pepper and a squeeze of lemon; and serve.
