1 Tbsp Rice Wine Vinegar
1 Tbsp Sesame Oil
1 Tbsp Soy Sauce
1-3 Small to Medium Thin-Skin Cucumbers
2 Tbsp Sauerkraut of your choice
5-6 Snap or Snow Peas
A Small Handful Sea Beans, bottoms trimmed
Chili Crunch (optional)
Sesame Seeds, for Garnish
Using a mandoline, slice cucumbers lengthwise into ribbons. Slice snap or snow peas into thin strips lengthwise. Pull sea beans apart into smaller pieces. Add vegetables to mixing bowl with kraut, sesame oil, soy sauce, and vinegar, and toss to combine everything. Plate and garnish with sesame seeds. Drizzle with chili crunch if desired.
