1 Jumbo Sweet Onion, diced
1 lb. Broccoli, florets removed, stem chopped thinly
2 cloves Garlic, minced
3 Tbsp. Olive Oil
4 oz. Cheddar, shredded (we used Smoked Cheddar)

Salt
Heat the oven to 400 degrees. In a large mixing bowl, toss together the broccoli, onion, garlic and olive oil with a pinch of salt and pepper. Pour onto an oiled sheet tray and roast until tender and brown, about 30-35 minutes, turning and stirring once.
Remove from the oven and sprinkle with the shredded cheese. Roast an additional 5 minutes, until the cheese is melted and bubbly.
