Made by Plymouth, the second oldest operating cheese maker in the U.S., this full bodied mature cheese has notes of butter, fruit and nuts. The sharp cheddar has extremely well developed flavors and has been aged to bring it out of its full potential. Pair with some caramelized balsamic onions for a perfect cracker topper!

Plymouth Artisan Cheese, Plymouth VT

Native Vermonter Jesse Werner took up the reigns of the Plymouth Cheese factory in order to creating a living history of cheese. Using a 125 year old method of granular curds, Werner is making cheese by the same recipe used by Plymouth Cheese Factory founder Col. John Coolidge, Calvin Coolidge's father. This method was brought over by early European immigrants, making Plymouth Cheese perhaps the only cheesemaker in America delivering as close a product to the original cheeses the settlers of the 1600s were making. Made with raw milk from a local cow pasture in Vermont, this local, single-origin milk from well treated cows ensures the freshest milk and the most consistently good flavor. Using the old fashioned method of wax sealing to preserve this freshness and flavor, these cheddars are a great mix between the original, classic cheddar recipes of the 1890s and innovative, modern flavors--with no pesky plastic packaging, which is not great for cheese or the environment.
