As the name implies, Schlossberger Jung is a young and versatile, hard Alpine-style cheese with notes of buttered popcorn and brassica. Aged 6 months. 

Made with raw milk and veal rennet.

Jumi Cheese, Brooklyn NY

Jumi was founded in 2006 by two childhood friends from the Emmental Region of Switzerland, Jürg and Mike. All four of these cheeses are produced in our cooperative creamery, Chäsi Eyweid. Mike is from a 5th-generation cheesemaking family, and Eyweid is managed by his father Urs and his brother Chrigu. We work with roughly 50 family dairy farms surrounding the village of Zäziwil where the creamery is located, the largest of which milks just 40 cows. The farmers are all cooperative owners of the creamery, and they keep their cows on pasture as long as the season will allow for it (roughly 6 months), and when the weather is too cold and the cows are in the barn, they are fed only dry hay. Jumi's mission is to sustain the traditional Swiss model of cooperative dairy farming and cheesemaking.
