We are very excited to receive the first of the season’s rhubarb. It’s finally Spring! Extremely tart if eaten raw, these bright pink stalks are almost always cooked or baked paired with fruits. For a refreshing snack, enjoy rhubarb lemonade with rhubarb ginger scones. Or bake a classic Strawberry Rhubarb Pie. Just don’t eat the leaves as they are poisonous!

Store in a plastic bag in the fridge for up to 6 days; or chop into 1-inch pieces and freeze.
