Purple Carrots

The deep purple color of these carrots indicates how loaded with antioxidants they are, plus they have double the alpha- and beta-carotene of orange carrots, so these are a super healthy carrots. Though they may be new to our markets, purple is actually the original color of carrot, with white being the other original carrot that bred together eventually led to the orange carrot. Who knows why except these purple beauties can stain a bit, like beets. Try roasted, boiled, sautéed, or make a stunning purple carrot juice.

Store in the refrigerator in a covered container, and cover the carrots in water. Change the water every 4-5 days, and carrots will store for up to a month.
