A cut like this begs to be slow cooked, either roasted at a high heat to get a quick crust, then wrapped in foil and cooked for hours at a low heat to render all the fat and make the meat fall apart tender and delicious, or toss in the slow cooker with apples and beer for 4-6hrs and shred for the most tender pulled pork of your life. Fry up leftovers in oil and spices to make carnitas.
