Originally a fall seasonal, this earthy salami made with porcini mushrooms and sage has become a year-round staple. All of the meat comes from Olsen Farms in Colville, WA where they farm using organic practices. After the meat is leaned out, it is ground and mixed with fresh ingredients, curing salt and spices; then its preserved in a carefully controlled chamber.
