Parmigiano Reggiano dates back many centuries. Remarkably, the production process has not changed a great deal since then. It is made with 100% raw cow's milk in the regions of Reggio-Emilia, Modena, and Parma, Italy. The cheese for these wedges is selected for their superb flavor profile and exceptional quality. The flavor is delicate and complex with fruity, nutty notes. There is a sweetness balanced by savory umami, a classic Parmigiano Reggiano trait. The wheels are aged a minimum of 24 months before being cut into wedges. At this aging, the cheese develops crunchy tyrosine crystals while also maintaining a perfect moisture balance.

This cheese is made from unpasteurized milk and animal rennet.
