Dried, organic black beans, sometimes known as turtle beans, have a creamier and more complex texture than their canned counterparts. Plus, they are more nutritious than canned beans and keep for just as long.
Cooking Instructions: In a 4 quart saucepan, soak 1 cup of black beans in 3 cups of water and 1 tbsp water overnight, for 8-12 hours. Drain and rinse beans and combine with 3 cups of water and 1 tsp salt. Bring to a boil, cover with a tight fitting lid, then reduce heat (low boil). Simmer for 90 minutes or until tender.
