Small Sweet Potatoes

These sweet potatoes are simply sweet potatoes that were harvested at a smaller size--about 1/2 to 3/4lbs each--or were planted too close together so they never grew to the large size we are used to seeing--about 1 to 1.5lbs each. As opposed to their larger counterparts, these sweet potatoes are more uniformly soft and sweet on the insides and cook even quicker making for delectable weeknight dinners. Steam, smash, and fry or bake for crispy smashed sweet potatoes; roast and drizzle with hot honey; top with maple syrup, yogurt, and nuts for breakfast.

Inspired by work experiences on CSA farms and exposure to the great challenges facing the modern food system, farmer/owner Gideon Porth began farming in order to connect people more closely to their food sources, and to be part of the vanguard of sustainable agriculture. Atlas Farm strives to be a model of ecological food production, engaging in organic farming practices that sustain the ecosystems around them, and striving to minimize their resource consumption and environmental impact with constant improvements to their farm systems. Atlas fertilizes their fields with cover crops and organic, naturally-occurring soil amendments. Insects and diseases are managed through crop-rotation, biological controls, and cultivar selection, with organic pest controls used only as a last resort. Their long-term goal is to become a 100% bio- and solar-powered farm.
