Fava beans, also known as broad beans, may be a lot of work to prepare, but they’re certainly worth it. First, you’ll want to remove the beans from the pod -- make it easy by pulling on the “string” along the seam of the pod. Next, after quickly blanching the beans, rub off the outer shell to access the buttery beans inside. A delicious taste of late spring, they’re ready to top a toast, enliven a salad, or add dimension to a spring ragu or hearty soup.

Iacopi Farms grows the highest quality English peas, sugar snaps, artichokes, fava and blue lake beans. They also produce a variety of fresh shelling and dried heirloom beans including Italian butter, borlotti, cranberry and cannellini.
About half of what Iacopi Farms grows is "dry farmed" which means that 50% of what’s planted has no access to water. After so many years of learning about the climate in this area of California’s coast, Iacopi Farms has developed specialized moisture enhancing and soil tilling techniques that enable seeds to grow without added irrigation. Iacopi Farm’s English peas are especially sweet and can be harvested for eight or nine months of the year, while California farms further inland are typically only able to harvest peas for a few months.
