Albert Straus is the oldest son of Bill and Ellen Straus, whose dairy on the shores of Tomales Bay in Marshall, Marin County, dates to 1941. In 1994, Albert converted the family farm to certified organic and founded Straus Family Creamery, the first 100% certified organic creamery in the United States. The creamery sources milk exclusively from small-scale certified organic family farms in Marin and Sonoma Counties, averaging around 250 cows per farm, and processes it with minimal intervention, producing cream-top milk, butter, yogurt, sour cream, and ice cream. In 2021, after 27 years in Marshall, Straus moved production to a new 50,000-square-foot facility in Rohnert Park designed around sustainability goals, while the Straus family dairy in Marshall remains in operation. The creamery's flagship glass bottle program, which allows for reuse and return, reflects an ongoing commitment to reducing the operation's carbon footprint.
