Just a trebuchet’s throw across the valley from Flag Hill Farm in Vershire, Vermont, Side Hill Cider Mill Vinegars is proud to partner with their good friend and neighbor Neil to offer two organic apple cider vinegars now available on the website.

Neil has been growing organic apples in his small, 200-tree orchard in Vershire since 1987, with organic certification since 2010. Most of the trees are selected wild varieties, though some have been grafted to heirlooms such as Golden Russet, Fameuse, Baldwin, Rhode Island Greening, and Roxbury Russet. A few newer scab-resistant cultivars like Liberty and Gold Rush are also part of the mix—all chosen for their hardiness and suitability for strict no-spray organic practices. Neil tends the orchard himself, pruning, mowing, and enriching the soil with compost and approved organic amendments as needed.

The apples are pressed at Flag Hill Farm and laid down in barrels, and because the pressing happens right at Side Hill, they can fully attest to the quality of every batch. It’s a collaboration rooted in shared values and local soil—true cider vinegar from tree to bottle.
