About essi Born in Greece, Matured in Australian, and Founded in London— Chef Kostas Vais and Team Essi are joining Farm to People for an exclusive pop-up celebrating the kick-off of summer. Following the teams months-long, sold-out pop-up in London— Essi's comes to Brooklyn for the first time this month to highlight the unique offerings of Australian-influenced Greek cuisine. Some of the team's favorite, unique offerings include the famous saganaki toastie, whole-smoked aubergine, octopus bolognese, and of course the fan-favorite whole lamb.
