While not an herb in the traditional sense, spruce tips have a bright, citrus flavor that works well to enhance other flavors in both savory and sweet dishes. Literally the young growth on branches of spruce trees, these babies have a strong flavor so you only need a few to really infuse your dishes with bright, woodsy life. Remove the paper covering of any tips before eating, just as you would fiddleheads, then sprinkle sparingly raw into salads or veggie dishes; puree into ice creams or panna cottas; infuse into syrups for cocktails or finishers.
